Aogami Blue Steel Core

Exposed only at the knife's edge, providing higher hardness for long-lasting sharpness.

San-Mai (Layered Steel)

Triple-laminate blade with stainless surface layers to improve toughness and reduce overall maintenance.

8.5in / 215mm blade length

The Gyuto has a 8.46” blade with an overall length of 14.5".

Symmetrical Flat Grind

Offers a good balance between cutting ability and strength.

60-61 Rockwell Hardness (HRC)

The higher the rating, the harder the material so the thinner/finer the cutting edge can be.

17° Edge Geometry

Blade hardness works with the angle to reduce the possibility of rolling or chipping.
